Ingredients

- 1/2 cup brown sugar packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white chocolate chips
Instructions
- Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter, Biscoff cookie butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth and well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Fold in white chocolate chips until evenly distributed.
- Scoop cookie dough into 2-tablespoon portions and place on the baking sheet about 2 inches apart.
- Chill the dough balls for 15 minutes (optional but recommended for thicker cookies).
- Bake for 8-10 minutes, or until edges are golden and centers appear slightly underbaked.
- Remove from the oven and press half of one Biscoff cookie into the top of each cookie with a few white chocolate chips if desired.
- Allow cookies to rest on the baking sheet for 5-10 minutes, then transfer to a wire rack to cool completely.
