small red onion, halved and sliced into thin half-moons

seedless watermelon, cut into cubes

Instructions
In a small bowl, mix red onion with lime juice and let it marinate for at least 10 minutes.
Stir olive oil into the onion-lime juice mixture.
In a large mixing bowl, combine watermelon cubes, cucumber, and feta cheese.
Pour the onion and lime dressing over the salad and toss gently to combine.
Sprinkle thinly sliced mint over the salad, toss again, and serve immediately.
