Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.
Add the cottage cheese, eggs, garlic powder, and Italian seasoning to a blender or food processor. Blend it on high until it is completely smooth and creamy with no curds left.
Pour the smooth batter onto the parchment-lined baking sheet. Use an offset spatula to spread it out into a large, even rectangle about 1/4 inch thick.
