Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla.
In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the butter mixture.
Stir in oats by hand until fully combined.
Drop dough by rounded tablespoons onto prepared baking sheets.
Bake for 10-12 minutes or until edges are golden. Let cool completely.
For the filling, beat butter until fluffy. Add powdered sugar gradually.
Mix in vanilla and milk, and beat until smooth and spreadable.
Spread or pipe cream filling onto half of the cookies, then top with remaining cookies to sandwich.
