Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large bowl, combine the melted butter and brown sugar until smooth. Add the vanilla extract and stir to combine.
Mix in the flour, oats, baking powder, and salt until fully incorporated and crumbly.
Press two-thirds of the mixture firmly into the prepared pan to form an even crust layer.
In a separate bowl, combine the chopped strawberries, granulated sugar, lemon juice, and cornstarch. Stir gently until the strawberries are evenly coated.
Spread the strawberry mixture evenly over the crust.
Sprinkle the remaining oat mixture evenly over the strawberry layer.
Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbling slightly. Remove from the oven and allow the bars to cool completely in the pan before slicing.
Once cooled, lift out using the parchment paper and cut into squares.
