Ingredients
For the Crust and Crumble
- 1 cup unsalted butter melted
- 1 cup brown sugar packed
- 1 cup all-purpose flour
- 1 cup old-fashioned rolled oats
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
For the Strawberry Filling
- 2 cups fresh strawberries chopped
- ⅓ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, combine the melted butter and brown sugar until smooth.
- Add the vanilla extract and stir to combine.
- Mix in the flour, oats, baking powder, and salt until fully incorporated and crumbly.
- Press two-thirds of the mixture firmly into the prepared pan to form an even crust layer.
- In a separate bowl, combine the chopped strawberries, granulated sugar, lemon juice, and cornstarch.
- Stir gently until the strawberries are evenly coated.
- Spread the strawberry mixture evenly over the crust.
- Sprinkle the remaining oat mixture evenly over the strawberry layer.
- Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbling slightly.
- Remove from the oven and allow the bars to cool completely in the pan before slicing.
- Once cooled, lift out using the parchment paper and cut into squares.
