Ingredients

fresh fruits
strawberries, cherries, blueberry, apricot

Instructions
Wash the fruits thoroughly and remove the stems.
Cut the fruits into halves or quarters depending on size.
Place the fruits in a saucepan over medium heat.
Add the sugar and lemon juice to the pan.
Stir gently to combine all ingredients.
Let the mixture cook until the fruits release their juices.
Continue simmering for about 10-15 minutes, stirring occasionally.
Lightly mash some of the fruits while leaving chunks for texture.
Remove from heat and stir in the vanilla extract.
Allow the compote to cool slightly before serving or storing.
