Ingredients
- ½ cup butter melted
- 1 cup brown sugar
- ¾ cup peanut butter
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sourdough discard
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ cup peanut butter for swirl
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 or 9×9 inch baking pan with parchment paper.
- In a mixing bowl, combine the melted butter and brown sugar, whisking until smooth and glossy.
- Add the peanut butter and mix well until fully incorporated.
- Stir in the eggs and vanilla extract, whisking until the mixture becomes smooth and creamy.
- Add the sourdough discard and mix until evenly combined.
- In the same bowl, add the flour, baking powder, and salt. Stir gently until a thick but spreadable batter forms.
- Spread the batter evenly into the prepared baking pan.
- Drop spoonfuls of peanut butter over the surface of the batter.
- Use a knife or skewer to gently swirl the peanut butter through the batter to create a marbled pattern.
- Bake for 22-28 minutes, until the edges are golden and the center is slightly soft.
- Remove from the oven and allow the squares to cool completely in the pan.
- Lift the slab out using the parchment paper and slice into squares before serving.
