Ingredients

- 1 cup sourdough discard
- 1 cup milk

Optional Lemon Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with butter or spray.
- In a large bowl, whisk together flour, sugar, poppy seeds, baking powder, baking soda, and salt.
- In a separate bowl, mix sourdough discard, milk, melted butter, eggs, lemon juice, and vanilla extract until smooth and combined.
- Pour wet mixture into the dry ingredients and gently fold with a spatula until just combined. Do not overmix; a few small lumps are fine.
- Evenly divide the batter among the muffin cups, filling each about two-thirds full.
- Bake for 18–22 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
- Remove from oven and allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
- For the optional lemon glaze, whisk powdered sugar and lemon juice until smooth, then drizzle over warm muffins.
- Serve warm or at room temperature for a soft, zesty bite with every crumb.
