Ingredients

Instructions
In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
Mix in the honey, vanilla extract, and sourdough discard until smooth.
In a separate bowl, whisk together the all-purpose flour, whole wheat flour, cinnamon, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
Shape the dough into a disk and wrap it tightly with plastic wrap. Refrigerate the dough for at least 1 hour.
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Roll the chilled dough between two sheets of parchment paper until about ⅛-inch thick.
Cut into rectangles or squares using a pizza cutter or knife.
Transfer the crackers to the prepared baking sheets, leaving a small space between each one.
Prick each cracker several times with a fork.
Bake for 12-16 minutes, or until the edges are lightly golden.
Remove from the oven and allow the crackers to cool on the baking sheet for 5 minutes.
Transfer to a cooling rack and let cool completely before serving or storing.
