Sourdough Applesauce Muffins
These sourdough applesauce muffins are soft, moist, and lightly spiced with cinnamon. Made with sourdough discard and naturally sweet applesauce, they’re perfect for breakfast, snacks, or meal prep. Easy to make and full of cozy flavor, they deliver bakery-style results at home.

Ingredients
- 1 ½ cups all-purpose flour
- 1 cup applesauce
- ½ cup sourdough discard
- 2 eggs
- ½ cup brown sugar
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup chocolate chips or raisins optional
- Thin apple slices for topping
Instructions
- Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, mix applesauce, eggs, brown sugar, oil, vanilla extract, and sourdough discard until smooth.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
- Fold in chocolate chips or raisins if using.
- Let the batter rest for 10 minutes (optional).
- Divide the batter evenly into muffin cups, filling each about ¾ full.
- Place thin apple slices on top of each muffin.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven and let cool in the pan for 5 minutes, then transfer to a cooling rack.
