Ingredients
- 5 apples sliced
- 1 heaping teaspoon ground cinnamon
- 1 lemon juice and zest
- 1 ¾ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup sourdough discard
- 2 large eggs
- 1 cup honey
- ½ cup vegetable oil
- 2 tablespoons butter for greasing skillet
Instructions
- Preheat oven to 350°F (175°C). Grease a cast-iron skillet with butter.
- In a bowl, toss apple slices with lemon juice, honey, and cinnamon. Let sit for 5 minutes to absorb flavor.
- In a large mixing bowl, whisk together eggs, oil, and sourdough discard until smooth.
