Instructions
Gather all ingredients.
Season the chuck roast with salt and pepper.
Heat olive oil in a large skillet over high heat. Sear the roast on all sides, about 4 minutes per side.
Transfer the roast to a slow cooker and sprinkle dry onion soup mix over the top.
Pour in the water, then add carrots, potatoes, onion, and celery on top.
Cover and cook on Low for 8 to 10 hours, until the roast is fork-tender and vegetables are soft.
