Instructions
Heat olive oil in a large skillet over medium heat.
Add the sliced sausage and cook until browned and slightly crispy, about 4-5 minutes.
Remove sausage from the pan and set aside.
Add diced onion, red bell pepper, and green bell pepper to the same skillet and cook until softened, about 4 minutes.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the rice to the skillet and stir to coat it in the oil and vegetables.
Sprinkle paprika, Cajun seasoning, black pepper, salt, thyme, and cayenne pepper over the rice and stir well.
Pour in the chicken broth and bring the mixture to a gentle simmer.
Cover the skillet and cook for 15 minutes until the rice is tender and most of the liquid is absorbed.
Return the cooked sausage to the pan and stir to combine.
Add the shrimp and cook for 3-4 minutes until they turn pink and opaque.
Stir gently to mix everything evenly and heat through.
Remove from heat and sprinkle with chopped parsley before serving.
