1lbboneless chicken breastscut into bite-sized pieces
2tbspolive oil
2clovesgarlicminced
1small onionsliced
¾cupcashewsunsalted
3tbspsoy sauce
1tbsphoisin sauce
1tbsphoney
1tspsesame oil
½tspblack pepper
2green onionschopped (for garnish)
Instructions
Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 5-6 minutes until golden and cooked through. Remove and set aside.
In the same skillet, add the remaining 1 tbsp olive oil. Sauté garlic, onion for 4-5 minutes until tender-crisp.
In a small bowl, whisk together soy sauce, hoisin sauce, honey, sesame oil, and black pepper to make the sauce.
Return the chicken to the skillet, add cashews, and pour the sauce over everything. Stir well to coat and cook for 2-3 minutes until heated through.
Garnish with green onions and serve hot over rice or noodles.
