Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together 🧈 butter, 🍬 brown sugar, 🍬 granulated sugar, and 🎃 pumpkin puree until smooth.
Beat in 🥚 egg and 🍯 vanilla extract until fully incorporated.
Add 🍂 cinnamon, 🍂 pumpkin pie spice, 🧂 salt, and 🥣 baking soda. Stir until well combined.
Fold in 🌾 oats, 🌾 flour, 🥜 walnuts, and 🍇 raisins just until the dough comes together.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
Bake for 10–12 minutes, or until the edges are golden and centers are set.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
