Pecan Chocolate Pie Bars

Ingredients
For the Shortbread Crust
- 2 cups all-purpose flour
- ½ cup granulated sugar
- ¼ teaspoon salt
- 1 cup unsalted butter softened
For the Pecan Chocolate Filling
- 3 large eggs
- 1 cup light corn syrup
- 1 cup packed light brown sugar
- 2 tablespoons unsalted butter melted
- 2 teaspoons vanilla extract
- 2 tablespoons all-purpose flour
- ¼ teaspoon salt
- 2 cups chopped pecans
- 1 cup pecan halves
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, combine the flour, sugar, and salt for the crust.
- Add the softened butter and mix until the mixture resembles coarse crumbs.
- Press the mixture firmly and evenly into the prepared baking pan.
- Bake for 15-18 minutes, or until the edges are lightly golden.
- Whisk together the filling ingredients until smooth.
- Fold in chopped pecans and chocolate chips. Pour over the warm crust.
- Top with pecan halves and extra chocolate chips.
- Bake for 35-40 minutes. Remove the pan from the oven and allow it to cool completely at room temperature.
- Refrigerate for at least 2 hours to fully set. Lift the bars from the pan using the parchment paper and cut into 24 squares.
