Peach Scones

Ingredients
For the Scones
- 2½ cups all-purpose flour
- ⅓ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter cold and cubed
- ⅔ cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- 1½ cups fresh peaches peeled and diced
- 1 tablespoon heavy cream for brushing
- 1 tablespoon coarse sugar optional
For the Vanilla Glaze
- 1 cup powdered sugar
- 2 tablespoons heavy cream
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold butter and cut it into the flour until the mixture resembles coarse crumbs.
- In another bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until the dough begins to come together.
- Fold in the diced peaches carefully.
- Turn the dough onto a lightly floured surface and gently shape it into an 8-inch circle about 1 inch thick.
- Cut the dough into 8 equal wedges.
- Arrange the wedges on the prepared baking sheet, leaving space between each scone.
- Refrigerate the shaped scones for about 20 minutes.
- Brush the tops with heavy cream and sprinkle with coarse sugar if using.
- Bake for 18-22 minutes, or until the tops are golden brown.
- Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Whisk together the powdered sugar, heavy cream, and vanilla extract until smooth.
- Drizzle the glaze over the cooled scones. Allow the glaze to set for 10 minutes before serving.
