Overnight Sourdough Raspberry Lemon Rolls
These Overnight Sourdough Raspberry Lemon Rolls are soft, fluffy, and filled with a vibrant swirl of tart raspberries and zesty lemon. Naturally leavened with sourdough starter, they develop deep flavor overnight, then get topped with a luscious lemon cream cheese frosting for the perfect morning indulgence.
Ingredients
For the Dough
- 200 g milk lukewarm
- 60 g sourdough starter active and bubbly
- 70 g granulated sugar
- 1 large egg
- 430 g bread flour
- 5 g salt
- 1 stick unsalted butter room temperature
- For the Filling
- 1 ½ cups frozen raspberries
- ½ cup granulated sugar
- 1 teaspoon cornstarch
- 1 tablespoon lemon zest
For the Frosting
- 4 oz cream cheese softened
- 2 tablespoons unsalted butter softened
- ¾ cup powdered sugar
- 1 tablespoon lemon juice
- 2 tablespoons milk as needed for consistency
Instructions
- In a large bowl, mix lukewarm milk, sourdough starter, sugar, and egg until well combined.
- Gradually add bread flour and salt, stirring until a soft dough forms.
- Knead for about 5 minutes, then add butter in small pieces, kneading until smooth and elastic.
- Cover the dough and refrigerate overnight for slow fermentation.
- In a small saucepan, combine raspberries, sugar, and cornstarch.
- Cook over medium heat, stirring often, until thickened (about 5 minutes).
- Stir in lemon zest and let the filling cool completely.
- Roll the chilled dough on a floured surface into a rectangle.
- Spread the raspberry filling evenly over the dough.
- Roll tightly into a log and cut into 12 equal rolls.
- Arrange in a greased baking dish with space between rolls.
- Cover and let rise for about 2 hours at room temperature, until puffy.
- Preheat oven to 375°F (190°C) and bake for 25–30 minutes, until golden brown.
- In a bowl, beat cream cheese, butter, powdered sugar, lemon juice, and milk until smooth.
- Spread frosting over warm rolls and serve fresh.
