Instructions
Pat the chicken breasts dry with paper towels.
Season both sides with salt, black pepper, paprika, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken breasts and cook for 5-6 minutes per side until golden brown. Transfer the chicken to a plate.
Reduce the heat to medium. Melt the butter in the same skillet.
Add the minced garlic and cook for about 30 seconds until fragrant.
Pour in the chicken broth and scrape up the browned bits from the bottom of the pan.
Stir in the heavy cream and bring to a gentle simmer.
Add the Parmesan cheese and stir until melted and smooth.
Stir in the chopped sun-dried tomatoes and red pepper flakes.
Add the fresh spinach and cook until wilted.
Return the chicken breasts to the skillet. Spoon the creamy sauce over the chicken.
Simmer for 3-5 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
Remove from the heat. Let the chicken rest for 5 minutes.
Garnish with chopped parsley and extra Parmesan cheese before serving.
