In a large mixing bowl, combine the ground lamb, mint, oregano, cumin, coriander, minced garlic, grated onion, salt, pepper, and if desired, egg and breadcrumbs.
Mix gently with your hands until just combined. Avoid overmixing to keep the burgers tender.
Cover the bowl and refrigerate the mixture for about 1 hour to let the flavors develop and firm up.
Divide the lamb mixture into four equal portions. Roll each into a ball and flatten gently into ¾-inch-thick patties. Press a small indentation in the center of each patty to prevent puffing during cooking.
