These viral hot chocolate molten cookies are rich, fudgy, and irresistibly gooey! Made with melted chocolate, chocolate chunks, and fluffy marshmallow toppings, they're the perfect brownie-like cookies for Christmas, holiday parties, or cozy winter evenings.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Melt the salted butter and semi-sweet chocolate chips together in a microwave-safe bowl in 20-second intervals, stirring until smooth. Allow to cool slightly.
In a large mixing bowl, whisk the eggs and granulated sugar for 3-4 minutes until pale, thick, and slightly foamy.
Gradually pour the melted chocolate mixture into the egg mixture. Add the vanilla extract and whisk until smooth.
In a separate bowl, combine the flour, cocoa powder, baking soda, and kosher salt.
Gently fold the dry ingredients into the chocolate mixture until just combined.
Fold in the chopped dark or semi-sweet chocolate.
Scoop the batter onto the prepared baking sheet, leaving 2 inches between cookies. Freeze for 15-20 minutes, until firm.
Pull the dough balls out of the freezer. Bake for 8-10 minutes, until the edges are set but the centers remain soft.
While the cookies are still hot, gently press one large marshmallow onto each cookie.
Return the cookies to the oven for 1-2 minutes to soften the marshmallows, if needed.
Sprinkle with flaky sea salt and allow the cookies to cool on the baking sheet for 5 minutes before serving.
