Instructions
Pound the chicken meat to an even thickness and season heavily with the salt, pepper, and lemon pepper.
Whisk the lime juice, zest, honey, garlic, and 1 tablespoon of oil together in a bowl. Pour half over the chicken and place on a bowl and let it sit for 10 minutes or refrigerate for 12-48 hours .
Heat the remaining oil in a heavy skillet over medium-high heat. Drop the chicken in. Don't touch it for 5 minutes so it forms a crust.
Flip the chicken, pour the reserved marinade into the pan, and let it bubble and reduce into a sticky syrup for another 5-6 minutes until the chicken is cooked through.
