Instructions
Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat, add ground turkey, and cook for 5-7 minutes until browned, breaking it apart with a spoon.
Add chopped onion and minced garlic to the skillet, cooking for 2-3 minutes until softened.
Stir in cubed sweet potatoes and diced tomatoes, season with salt and black pepper, and cook for 5 minutes.
Transfer the mixture to a baking dish, sprinkle shredded cheddar cheese on top, and cover with foil.
Bake for 25-30 minutes, remove foil, and bake for an additional 10 minutes until cheese is melted and bubbly. Garnish with parsley and serve.
