Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, cream together butter and brown sugar until smooth.
Beat in the egg, then stir in grated zucchini, oats, flour, baking soda, salt, and cinnamon until well combined.
Fold in chopped walnuts and dried cranberries. Drop tablespoon-sized portions of dough onto the prepared baking sheet.
Bake for 12-15 minutes, or until the edges are golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Serve warm or store in an airtight container for a healthy snack.
