Instructions
Heat olive oil in a large skillet over medium heat, add diced onion and minced garlic, and sauté for 2-3 minutes until fragrant.
Add ground beef, cooking until browned, about 5-7 minutes, then drain excess fat.
Stir in diced sweet potatoes, salt, black pepper, and paprika, cooking for 10 minutes until potatoes soften.
Add sliced zucchini, stirring well, and cook for an additional 5-7 minutes until vegetables are tender.
Remove from heat and sprinkle with fresh parsley.
Serve warm in bowls or plates.
