This comforting garlic parmesan chicken meatloaf is packed with flavor from fresh garlic, herbs, marinara, and cheese. Easy enough for weeknights, fancy enough for guests.
Preheat oven to 350°F (180°C) and line a loaf pan with parchment paper or foil.
In a bowl, combine chicken, onion, garlic, egg, 1/4 cup parsley, 1/2 cup marinara, seasoned bread crumbs, 1/3 cup Parmesan, Italian herbs, salt and pepper. Shape into a loaf in the prepared pan.
Bake for 45 minutes. Remove from oven, top with 1/4 cup marinara and mozzarella, then return to oven for another 15 minutes.
Cool for 10 minutes on a rack.
In a skillet, melt butter over medium heat. Add panko and garlic powder, stir for 3-4 minutes until toasted. Let cool for 4-5 minutes.
Stir in 2 tablespoons Parmesan and 1 tablespoon parsley. Sprinkle over meatloaf before serving.
Serve with remaining marinara and garnish with fresh herbs if desired.
