Ingredients

medium zucchini
grated
1/2
cup
sourdough starter
active or discard

large egg

all-purpose flour

chopped chives or parsley

garlic

black pepper

Instructions
Grate the zucchini and squeeze out as much liquid as possible using a clean cloth or paper towel.
Place the drained zucchini in a mixing bowl.
Add sourdough starter, egg, flour, garlic, herbs, salt, pepper, and cheese (if using).
Mix everything until a thick batter forms. Optional: Rest for 5-10 minutes (to let batter thicken slightly).
Heat olive oil in a non-stick pan over medium heat.
Scoop small portions of batter into the pan and flatten slightly.
Cook for 3-4 minutes on each side until golden brown and crispy.
Remove and place on paper towels to absorb excess oil.
Serve warm with your favorite dipping sauce.
