Ingredients
- 1 cup sourdough discard
- ½ cup creamy peanut butter
- ½ cup granulated sugar
- ¼ cup unsalted butter melted
- 2 large eggs room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a standard loaf pan or line it with parchment paper.
- In a large bowl, whisk together the sourdough discard, peanut butter, sugar, melted butter, eggs, and vanilla extract until smooth and fully combined.
- Add the flour, baking powder, baking soda, and salt to the bowl and gently mix until just combined, avoiding overmixing.
- Pour the batter into the prepared loaf pan and smooth the top evenly.
- Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
