Easy Sourdough Discard Chocolate & Coffee Cake
This Easy Sourdough Discard Chocolate & Coffee Cake combines deep cocoa richness with the bold aroma of brewed coffee and the subtle tang of sourdough discard. The result is a moist, decadent cake topped with a silky milk chocolate frosting, simple to make, rich in flavor, and perfect for using up leftover sourdough starter.
Ingredients
Cake Batter:
- 40 g cocoa powder
- 113 g brewed coffee
- 56 g unsalted butter
- 113 g semi-sweet chocolate chopped
- 2 large eggs
- 75 g whole milk
- 8 g vanilla extract
- 75 g sourdough discard
- 200 g granulated sugar
- 50 g light brown sugar
- 56 g vegetable oil
- 90 g all-purpose flour
- 4 g baking powder
- 2 g baking soda
- 4 g salt
Frosting:
- 226 g milk chocolate chopped
- 226 g heavy cream
- 28 g sour cream
- 30 g powdered sugar
Instructions
- Preheat oven to 175°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.
- In a heatproof bowl, combine cocoa powder, brewed coffee, butter, and chopped semi-sweet chocolate. Stir until melted and smooth.
- In a separate bowl, whisk together eggs, milk, vanilla extract, and sourdough discard until smooth.
- Add granulated sugar, brown sugar, and vegetable oil to the wet mixture and stir until well combined.
- In another bowl, sift together flour, baking powder, baking soda, and salt.
- Gradually mix dry ingredients into the wet mixture until combined.
- Fold in the melted chocolate mixture gently until batter is smooth.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Warm heavy cream in a saucepan until hot (not boiling). Pour over chopped milk chocolate, let sit for 5 minutes, then stir until smooth.
- Add sour cream and powdered sugar to the ganache, mixing until glossy and thickened.
- Spread frosting evenly over the cooled cake using a spatula.
- Optional: Garnish with chocolate shavings, cocoa powder, or a sprinkle of espresso powder for decoration.
