These soft, buttery eggnog cookies are flavored with warm cinnamon, nutmeg, and vanilla, then topped with creamy homemade eggnog buttercream frosting. Perfect for Christmas, holiday parties, and festive dessert trays!
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
Whisk together the flour, baking powder, salt, nutmeg, and cinnamon in a medium bowl.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar for 2–3 minutes until creamy and fluffy.
Add the egg yolks, and vanilla extract. Mix until combined.
Pour in the eggnog and mix until smooth.
Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Avoid overmixing.
Scoop the dough into evenly sized portions and arrange them on the prepared baking sheets, leaving approximately 2 inches between each cookie.
Bake for 10-12 minutes, or until the edges are set and the centers remain soft.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
For the frosting, beat the softened butter until smooth. Gradually add the powdered sugar, and eggnog. Beat until fluffy, adding more eggnog if needed to reach a spreadable consistency.
Spread or pipe the frosting over the completely cooled cookies.
Finish with a light dusting of nutmeg. Let the frosting settle before serving.
