Ingredients
Peach Filling
- 6 cups fresh peaches peeled and sliced
- 1/2 cup brown sugar
- 1/4 cup granulated sugar

- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Cobbler Topping
- 1 1/2 cups all-purpose flour

- 6 tablespoons cold unsalted butter cubed
- 1 cup sourdough discard
- 2 to 4 tablespoons milk
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a 9-inch baking dish or cast-iron skillet.
- Add sliced peaches, brown sugar, granulated sugar, lemon juice, cornstarch, cinnamon, vanilla extract, and salt to a large bowl.
- Stir until the peaches are evenly coated.
- Transfer the peach mixture to the prepared baking dish.
- In a separate bowl, whisk together flour, baking powder, salt, and sugar.
- Cut the cold butter into the flour mixture until coarse crumbs form.
- Stir in the sourdough discard.
- Add milk a little at a time until a thick, soft dough forms.
- Drop spoonfuls of the dough evenly over the peach filling.
- Leave small gaps between the dough portions to allow steam to escape.
- Bake for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
- Remove from the oven and place on a cooling rack.
- Allow the cobbler to rest for 15 minutes before serving.
- Serve warm, preferably with vanilla ice cream.
