Ingredients

450 g ground beef or Italian sausage
1
small onion
diced

cloves
garlic

28 oz crushed tomatoes

tablespoons
tomato paste

chicken or beef broth

lasagna noodles
broken into pieces

teaspoon
Italian seasoning
Salt and black pepper to taste

ricotta cheese
1
cup
shredded mozzarella cheese
½
cup
grated Parmesan cheese
Optional: spinach
basil, red pepper flakes
Instructions
Heat a large pot over medium heat.
Add ground beef or sausage and cook until browned.
Add diced onion and cook until softened.
Stir in garlic and cook for 1 minute.
Add tomato paste and mix well.
Pour in crushed tomatoes and broth.
Add Italian seasoning, salt, and pepper.
Bring the mixture to a boil, and add broken lasagna noodles.
Reduce heat and simmer until noodles are tender, and stir occasionally to prevent sticking.
In a small bowl, mix ricotta, mozzarella, and Parmesan.
Ladle soup into bowls, add a spoonful of cheese mixture on top and Garnish with basil if desired and serve hot.
