Ingredients
- 1½ cups 175g powdered sugar
- ⅓ cup 35g unsweetened cocoa powder
- 2 large egg whites room temperature
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the powdered sugar and cocoa powder in a medium bowl until well combined.
- Add the egg whites to the dry ingredients.
- Stir until a thick, smooth, glossy batter forms with no dry pockets remaining.
- Scoop about 1½ tablespoons of batter onto the prepared baking sheet, leaving 2 inches between each cookie.
- Bake for 10 to 12 minutes, or until the tops are shiny with light cracks and the edges are set.
- Remove the baking sheet from the oven and let the cookies rest for 10 minutes.
- Carefully transfer the cookies to a wire rack and allow them to cool completely before serving.
