Instructions
Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, beat the softened butter and sugar until light and fluffy, about 3 to 4 minutes.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Add the Greek yogurt and mix until smooth and fully combined.
Gradually add the dry ingredients to the wet ingredients and mix just until no dry flour remains.
Pour the batter into the prepared cake pan and spread it evenly.
Arrange the sliced peaches over the top of the batter, slightly pressing some into the surface.
Sprinkle the remaining 2 tablespoons of sugar evenly over the peaches.
Bake for 45 to 50 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool in the pan for 5 minutes.
Carefully remove the sides of the pan and transfer the cake to a cooling rack.
Cool until slightly warm or completely cooled. Dust generously with powdered sugar before serving.
