Instructions
Melt the butter in a large pot over medium heat.
Add the chopped onion and cook until soft and translucent.
Stir in the garlic and cook for 30 seconds until fragrant.
Add the sliced mushrooms and cook until they release moisture and turn golden.
Sprinkle the flour over the mushrooms and stir well for 1 minute.
Slowly pour in the broth while stirring to avoid lumps.
Simmer for 10-12 minutes until slightly thickened.
Blend the soup partially leave some mushrooms or fully until desired consistency.
Stir in the heavy cream, salt, and black pepper.
Simmer gently for 5 minutes without boiling.
Taste and adjust seasoning if needed.
Remove from heat and rest for a few minutes before serving.
