Easy cheesy ground beef enchiladas made with seasoned beef, smoky chipotle peppers, melty cheese, and rich red enchilada sauce for the perfect family dinner.
1small can chipotle peppers in adobo sauce (use 2-3 tablespoons)
¼ cupchicken stock
8ounces shredded cheddar cheese
1(19-ounce)can red enchilada sauce
8tortillas
Instructions
Preheat your oven or smoker to 350°F.
In a medium pan, heat olive oil over medium heat. Add diced onions and cook until softened and slightly browned. Transfer to a bowl and set aside.
In the same pan, brown the ground beef over medium-high heat. Drain excess grease and reduce heat to medium.
Add cooked onions back to the beef along with taco seasoning and 1–2 tablespoons of chipotle peppers in adobo sauce (or just the liquid for a milder flavor).
Pour in chicken stock, scraping the bottom of the pan. Stir in half of the shredded cheese until melted and mixture becomes creamy. Remove from heat.
Spread 2 tablespoons of enchilada sauce on the bottom of a baking dish.
Fill each tortilla with 3–4 tablespoons of the beef mixture, roll tightly, and place seam-side down in the baking dish. Repeat until the dish is full.
Cover rolled tortillas with remaining enchilada sauce and sprinkle the rest of the cheese evenly on top.
Bake for 20 minutes until cheese is melted and sauce is bubbling.
Top with fresh cilantro and optional toppings like sour cream, pico de gallo, guacamole, or pickled jalapeños.
