Ingredients
- 3 cups pecan halves
- 11 ounces soft caramel candies unwrapped
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 12 ounces semi-sweet chocolate chips
- 1 tablespoon coconut oil
- ½ teaspoon flaky sea salt optional
Instructions
- Preheat the oven to 350°F (175°C) and toast the pecans on a baking sheet for 6–8 minutes. Let them cool completely.
- In a medium saucepan over low heat, melt the caramel candies with the heavy cream, stirring until smooth. Stir in the vanilla extract.
- Add the toasted pecans to the melted caramel and mix until all the pecans are evenly coated.
- Line a baking sheet or tray with parchment paper and scoop small mounds of the caramel-pecan mixture onto the tray.
- Refrigerate the clusters for 20-30 minutes until they are firm.
- Melt the chocolate chips and coconut oil together in a microwave-safe bowl in 20-second intervals, stirring until smooth.
- Dip each chilled cluster into the melted chocolate, coating it completely, then let the excess chocolate drip off.
- Place the coated clusters back onto the parchment-lined tray and sprinkle with flaky sea salt, if using.
- Refrigerate for another 2-30 minutes, or until the chocolate is completely set.
- Serve immediately or store the clusters in an airtight container at room temperature or in the refrigerator until ready to enjoy.
