Dubai Chocolate Mochi Cookies

Ingredients
Pistachio Filling
- 1 cup pistachio cream
- 1 cup kataifi pastry finely chopped
- Pinch of salt
Mochi Dough
- 1 cup glutinous rice flour
- 1/4 cup granulated sugar
- 1 cup whole milk
- 1 tablespoon unsalted butter
Chocolate Coating
- 300 g dark chocolate
- 2 tablespoons unsalted butter
- 1/4 cup unsweetened cocoa powder
Instructions
- Toast the kataifi pastry in a dry skillet over medium heat until golden and crispy, and let the kataifi cool completely.
- Mix the toasted kataifi, pistachio cream, and salt in a bowl until combined.
- Scoop 12 portions of the filling onto a parchment-lined tray, and freeze for 30 minutes or until firm.
- In a microwave-safe bowl, whisk together the glutinous rice flour, sugar, and milk until smooth, and microwave for 1 minute and stir well.
- Continue microwaving in 30-second intervals, stirring after each interval, until the mixture becomes thick and translucent.
- Add the butter and mix until fully incorporated.
- Allow the mochi dough to cool until easy to handle.
- Divide the dough into 12 equal portions.
- Flatten each portion into a small circle.
- Place a frozen pistachio filling ball in the center of each circle.
- Wrap the dough around the filling and pinch to seal.
- Roll gently into smooth balls.
- Melt the dark chocolate and butter together until smooth, and Let the chocolate cool slightly.
- Dip each mochi ball into the melted chocolate, coating completely.
- Place on a parchment-lined tray, and refrigerate for 15 minutes to set the chocolate.
- Dust generously with cocoa powder, and Chill for another 15 minutes before serving.
