Instructions
Boil the pasta in heavily salted water according to the package directions. Drain and rinse under cold water until it's completely cooled off.
Make the Avocado Ranch: In a blender or food processor, combine the avocado, Greek yogurt (or mayo), lime juice, dill, chives, garlic, onion powder, salt, and pepper. Blend until completely smooth. If it's too thick, add water 1 tablespoon at a time until it reaches a pourable dressing consistency.
In a large bowl, toss the cooled pasta with the halved cherry tomatoes, chopped red onion, and sweet corn.
Pour the creamy avocado ranch dressing over the top and gently fold everything together until the pasta is fully coated. Serve immediately or chill for 30 minutes to let the flavors meld.
