Instructions
Brown the ground sausage in a large pot over medium heat, breaking it into small pieces as it cooks. Cook until fully browned, then remove it from the pot and set aside.
Melt the butter in the same pot. Add the diced onion and carrots and cook for 4 to 5 minutes, until the vegetables begin to soften.
Add the minced garlic and cook for about 30 seconds, until fragrant.
Return the cooked sausage to the pot and add the diced potatoes.
Pour in the chicken broth and add the salt and black pepper. Bring the soup to a gentle boil.
Reduce the heat and simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
Reduce the heat to low and stir in the half-and-half. Heat gently without bringing the soup to a vigorous boil.
Add the sour cream and stir until completely incorporated and the soup is creamy.
Taste and adjust the seasoning if needed.
Remove the pot from the heat and let the soup rest for 5 minutes.
Ladle the soup into bowls and top with shredded cheddar cheese and chopped chives or green onions.
