Instructions
Add the pumpkin puree, chickpeas, tahini, lemon juice, garlic, olive oil, cumin, smoked paprika, cinnamon, and salt to a food processor.
Blend for 1-2 minutes until the mixture becomes smooth and creamy.
Add cold water, 1 tablespoon at a time, while blending until the hummus reaches your desired consistency.
Taste and adjust the salt, lemon juice, or spices if needed.
Transfer the hummus to a serving bowl.
Use the back of a spoon to create swirls on the surface.
Drizzle with a little olive oil and sprinkle with pumpkin seeds and fresh parsley.
Serve immediately with pita bread, pita chips, crackers, or fresh vegetables.
