This creamy Million Dollar Soup is a rich and comforting one-pot meal made with tender chicken, potatoes, crispy bacon, melted cheddar cheese, and a velvety broth. It’s hearty, flavorful, and perfect for cozy dinners, cold weather meals, or easy family comfort food.
Cook the bacon in a large pot over medium heat until crispy. Remove the bacon and place it on paper towels, leaving about 1 tablespoon of bacon grease in the pot.
Add the butter and diced onion to the pot. Cook for about 3-4 minutes until the onion becomes soft and translucent.
Stir in the minced garlic and cook for about 30 seconds until fragrant.
Add the diced potatoes and chicken broth to the pot. Bring to a gentle boil, then reduce the heat and simmer for about 12-15 minutes until the potatoes are tender.
Stir in the shredded cooked chicken and cook for another 3-4 minutes.
Pour in the milk and heavy cream while stirring gently to combine.
Add the shredded cheddar cheese gradually, stirring continuously until the cheese melts and the soup becomes creamy.
Season with salt, black pepper, and paprika. Stir well.
Crumble the cooked bacon and stir half of it into the soup.
Ladle the soup into bowls and top with the remaining bacon, chopped green onions, and crushed crackers.
