Ingredients
- 1 lb ground beef 80/20 blend
- ½ lb Italian sausage
- 1 medium onion diced
- 4 cloves garlic minced
- 1 can 28 oz crushed tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups rotini pasta or short pasta of choice
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- ¼ teaspoon red pepper flakes optional
- Fresh parsley and basil for garnish

Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add diced onion and sauté until soft and translucent.
- Stir in minced garlic and cook for about 30 seconds until fragrant.
- In a large bowl, combine ground beef, Italian sausage, salt, pepper, and herbs. Mix gently and form into small meatballs.
- Brown the meatballs in the same pot until golden on all sides, then remove and set aside.
- Pour in a small amount of chicken broth to deglaze the pot, scraping up any brown bits.
- Add crushed tomatoes, remaining broth, basil, oregano, and thyme. Stir well and bring to a simmer.
- Return the meatballs to the pot and cook for 15 minutes on medium heat.
- Add the pasta directly into the simmering soup and cook until tender, about 8-10 minutes.
- Lower the heat and stir in the heavy cream, mixing until smooth and creamy.
- Taste and adjust seasoning with salt, pepper, or red pepper flakes as desired.
- Let the soup rest for 10 minutes before serving to deepen the flavors.
