Instructions
Cook the chopped bacon in a large pot over medium heat until crispy, then remove and set aside.
Add butter to the pot and sauté the onion until soft and translucent.
Stir in the garlic and cook for 30 seconds until fragrant.
Add the potatoes, corn, chicken, chicken broth, salt, pepper, paprika, and thyme.
Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
Lower the heat and slowly stir in the milk and heavy cream. Simmer gently for 5 minutes without boiling.
Stir in the cooked bacon and fresh parsley. Taste and adjust seasoning if needed.
Remove from heat and let rest before serving.
