Instructions
Preheat your oven to 350Β°F (175Β°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper.
In a large bowl, whisk together π₯ eggs, π¬ sugar, π― brown sugar, π§ oil, and π₯ vanilla until smooth.
In another bowl, sift together π flour, π§ baking powder, π§ baking soda, π§ salt, π cinnamon, and π nutmeg.
Gradually add the dry mixture into the wet mixture, stirring gently until just combined.
Fold in π₯ grated carrots, π° pecans, and π raisins (if using).
Divide batter evenly between pans, smoothing the tops. Bake for 30β35 minutes until a toothpick inserted comes out clean.
Cool cakes in pans for 10 minutes, then remove and cool completely on wire racks.
For the frosting: beat π₯ cream cheese and π§ butter together until smooth. Add π¬ powdered sugar and π₯ vanilla, mixing until creamy.
Frost the cooled cakes, stacking them into layers with frosting in between. Spread the remaining frosting on top and sides.
Garnish with π° chopped pecans and serve chilled or at room temperature.
