Cinnamon Brown Sugar Cookies

Ingredients
For the Cookie Dough:
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 cup unsalted butter softened
- 1 ¼ cups light brown sugar packed
- ¼ cup granulated sugar
- 1 large egg
- 1 tablespoon vanilla extract
For the Cinnamon-Sugar Coating:
- ¼ cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Combine flour, baking soda, cinnamon, and salt in a bowl and set aside.
- In a large bowl, beat softened butter, brown sugar, and granulated sugar until fluffy. Mix until fully combined and smooth.
- Add dry ingredients to the butter mixture and stir until the dough forms.
- In a small bowl, combine sugar and cinnamon.
- Refrigerate for 30 minutes for thicker, softer cookies.
- Scoop dough into balls (about 1 ½ tablespoons each), then roll in cinnamon sugar. Line a sheet with parchment and place dough balls 2 inches apart.
- Bake at 350°F (175°C) for 9–11 minutes, removing when edges turn lightly golden.
- Let cookies cool on the sheet for 5 minutes, then transfer to a rack.
