Ingredients

cooked shredded chicken
4
large flour tortillas
1 ½
cups
shredded cheese cheddar, mozzarella, or Mexican blend

tablespoon
olive oil or butter

cup
sliced bell peppers

sliced onions
optional

teaspoon
taco seasoning or paprika
Salt and black pepper to taste
Optional
jalapeños, cilantro, hot sauce
Instructions
Heat a skillet over medium heat and add oil or butter.
Place one tortilla flat in the pan.
Sprinkle a layer of cheese evenly over the tortilla.
Add shredded chicken on top of the cheese.
Add bell peppers and onions if using.
Sprinkle seasoning, salt, and pepper.
Add another layer of cheese on top of the filling.
Place a second tortilla on top or fold the tortilla in half.
Cook until the bottom is golden brown and crispy.
Flip carefully and cook the other side until cheese is melted.
Remove from skillet and let rest briefly.
Slice into wedges and serve warm.
