Instructions
Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
In a medium bowl, whisk together flour, oats, baking soda, and salt, then set aside.
In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy, then beat in peanut butter, egg, and vanilla extract.
Gradually add the dry ingredients to the wet mixture, stirring until just combined, then fold in chocolate chips if using.
Press the dough evenly into the prepared pan, smoothing the top with a spatula.
Bake for 20-25 minutes until golden brown, then cool completely in the pan before cutting into bars.
