Cheesy Mashed Potato Casserole

Ingredients
- 3 pounds Yukon Gold potatoes about 6 medium
- ½ cup Butter 1 stick
- ½ cup Heavy cream
- 1½ cups Cheddar cheese shredded
- 1 cup Mozzarella cheese shredded
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper or to taste
- ½ teaspoon Garlic powder optional
- 2 teaspoons Green onions chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a casserole dish.
- Peel and cube the potatoes, then boil them in salted water for 15-20 minutes until tender.
- Drain the potatoes completely and return them to the pot while still warm.
- Add butter and cream, then mash until smooth and creamy.
- Stir in half of the shredded cheddar and mozzarella cheeses.
- Season with salt, black pepper, and garlic powder to taste.
- Spread the mashed mixture evenly into the prepared casserole dish.
- Sprinkle the remaining cheese evenly over the top.
- Bake uncovered for 25-30 minutes, until the top is golden brown and bubbling.
- Let it rest for 5 minutes before serving. Garnish with green onions if desired.
