Instructions
Preheat the oven to 375°F (190°C) and lightly grease a mini muffin pan.
Unfold the thawed puff pastry on a lightly floured surface and cut it into squares large enough to fit into the muffin cups.
Gently press each pastry square into the prepared muffin cups, creating small pastry shells.
In a large bowl, mix the softened cream cheese, sour cream, and minced garlic until smooth.
Add the chopped spinach and artichoke hearts and mix until evenly combined.
Fold in the shredded mozzarella and Parmesan cheese until the filling is creamy and well mixed.
Spoon the spinach-artichoke mixture evenly into the puff pastry cups, taking care not to overfill them.
Brush the exposed pastry edges lightly with beaten egg.
Bake for 15-20 minutes, or until the puff pastry is golden brown and the filling is hot and bubbly.
While the bites bake, cut ghost shapes from the mozzarella or Provolone slices using a small ghost-shaped cookie cutter or a sharp knife.
Place two black sesame seeds on each cheese ghost to create the eyes.
Carefully place one cheese ghost on top of each baked spinach-artichoke bite.
Return the bites to the oven for 1-2 minutes, just until the cheese ghosts become soft and slightly melted.
Remove from the oven and let the bites rest for about 5 minutes before serving.
